Most ramen noodles are made from four basic ingredients, wheat flour, kansui, salt and water. You will understand that the ingredient list is a lot longer on commercialy distributed ramen.
Wheat flour:
Wheat flour is a powder made from the grinding of wheat. This is the most produced flour in the world.
Kansui:
Kansui is a type of alkaline water that, most of the time, contains sodium carbonate and potassium carbonate. Also, sometimes phosphoric acid is added. Kansui has been named after the water in a lake in Inner Mongolia, the Lake Kan. Noodles made with Kansui have a yellowish color.
Salt:
Salt is one of the most popular seasoning in the world and also one of the oldest used by human. It's very good to preserve food, but most of the time it's used to give taste to food.
Water:
Water is needed to work with the flour and without it, it would be impossible to make the
ramen noodles, or most meals, for that matter.
These ingredients are for basic ramen, but you will find a lot more on commercialy sold packages of instant ramen. The list can go on for 40-50 ingredients, but many of the things you don't want to eat are in the soup base, so the noodles by themselves are pretty good. You can find tons of recipes on the site that don't use the soup base and taste delicious! So many ingredients can be added to the noodles to make a delicious dish, like
vegetarian ramen or
chicken ramen. Once you find quality noodles, you can let your imagination go and add great things like shiitake mushrooms, green peppers or some baked chicken.
