  Niboshi Dashi

               A Japanese soup broth made with dried Sardines
Niboshi Dashi
(Dried Sardines broth)
Niboshi sardines dashi
You will need:
- 1/2 ounce of dried Niboshi (15 grams)
- 4 cups of water

1. Remove the head and guts off the sardines.
2. Soak the Niboshi in water for 1 hour.
3. Heat it (Medium heat).
4. Bring the water to a boil and let it boil for two minutes.
5. Turn off the heat.
6. Remove the Niboshi with a strainer.
The remaining liquid is your Niboshi Dashi.

More Dashi:
- Shiitake Dashi   (Shiitake Mushrooms broth)
- Niboshi Dashi   (Dried Sardines broth)
- Kombu Dashi   (Kelp broth)

Even if at first sight it might not look very good, these dried fish make one of the most popular authentic ramen broth in Japan. It gives great taste to the dishes and with some other very popular ingredients like shiitake mushrooms or dried seaweed, you can make yourself a wonderful ramen meal.
